Unexpected Guests Sandwich... :)



I have always been fond of food that is simplest to make , yet most delicious ...
And so keep experimenting with it, Always v tend to feed people with the most variety of dishes, whenever somebody is invited at home, we try making new dishes, but wen guests are unexpected and u are serving them simple food , you somewhere keep thinking, "kuch toh unique present karna hai" , same happens with me, 
It has minimum ingredients, maximum Taste, a very simple sandwich, do try it,,,


Recipe:
(Makes one sandwich )

Method :
Apply chutney on one bread slice,

Keep another bread slice on top, apply tomato sauce ,
 now keep third bread, apply butter ,
  and spread generous amount of grated cheese, sprinkle black pepper / chat masala... 

And you are done.
Cut into 4 (triangles look good)
Serve with wafers ...
Notes:
After you are done making , pop them in a container , and keep in freezer for 5 mins , they taste awesomely good wen served cold...
If in urgency , serve the way it is, Do not put them in freezer, they taste equally good
A very convenient sandwich to carry for outings, and kids love it.

Seyal Pav... Sindhi delicacy...



Another lovely Sindhi delicacy is SEYAL PAV ... 
My mom taught me this lovely, delicious , yummy , amazing, top of the world , best-est dish... 
I am a happy child wen am eating this, I completely love it, it is soft as pillow, yet a bit crisp too... 
Super addictive it is going to be , once u have it... 
Seriously trust me, this spicy and tangy flavorful pav is a amazing burst of flavors in your mouth... 
I would definitely want u people to try it... 
It's simple , very quick and wow

Recipe:
Ingredients:
  • 8 Pav(slit into half)
  • 12-13 cloves of Garlic
  • 3 Green chillies 
  • Coriander small handful 
  • 4 Tomatoes (grind them )
  • Salt to taste
  • 1 tsp Turmeric powder 
  • 1 tbsp Coriander powder
  • 1/2 tbsp Red chilli powder
  • Oil 7-8 spoons( yes it does require a Good quantity )
  • Water as required
Method :
To make the filling :
  • Blend tomatoes keep aside.
  • Chop garlic, green chili, coriander leaves and keep aside.( very fine chop or grind everything into a thick chunky paste)
  • Now take 7-8 spoons oil in a pan 
  • Put garlic mixture, let it release its smell, and change a little color, now add tomatoes and all dry masala ( salt , red chilli powder , coriander powder , turmeric powder ) , now mix and cover , slow the flame , let it cook til the oil is released at the sides . 
  • As done , keep aside.
To make the pav:
  • Take the pav , cut into half (like we cut for vada pav)
  • Now in same pan, put 2 spoon oil , 
  • Take the slit pav, put one big spoon of the ready garlic tomato masala, close it... 
  • Likewise do the other pav too... Now put these ready pav in the pan in which v put 2 spoon oil, not more than 4 pav at a time... 
  • Now add 5-6 spoons water surrounding the pav ... 
  • Let flame me slow medium , once done on one side , turn and again put 2-3 spoon water , cook , make it little crisp , but not too hard, it's texture is pillowy and crisp both ... As u see it's done , put little masala on top and remove from pan and serve.
  • Put other 4 pav and repeat the same way... 
Notes:
  • Spices u can adjust according to your taste... 
  • And this garlic tomato masala can be preserved - goes well for 3-4 days in refrigerator ...
  • U can make vegetable out of it - we have a very special dish named as Thoom masale mei besan tikki , we make that... 
  • U can sandwich this masala between the leftover rotis, crisp both side on tawa, and eat, tastes heavenly 
  • So make more masala and keep enjoing it.

Classic Paneer Tikki


Sometimes, not adding more of flavors and extra spices , gives a classic taste to a dish, and it tastes delicious too...And there is uniqueness is simplicity too.
So, today , going the old fashioned way,,,

Recipe:
Makes 8-9 tikkis, medium to big size
  • 4-5 boiled and mashed potatoes
  • 6 slices of bread(done into bread crumbs) 
  • Salt to taste
  • Oil for frying(can even shallow fry /air fry)
For paneer filling:
  • 100 gm paneer (mash it with hands only) 
  • Salt to taste 
  • 1/2 tbsp red chili
  • 1 tbsp coriander leaver fine chopped
  • 2 green chillies small cut
Method :
  • Mix everything under the paneer filling section, keep aside
  • Make a mixture of potatoes, crumbs nd salt nd keep aside
  • Now, apply little oil on Palm, take a small ball of potato mixture and make gap like a bowl, stuff the paneer mixture and close it completely.
  • Now just deep fry till golden brown and its done.
  • Serve hot.

SEYUN PATATA(sevaiyan served with fried potatoes)


Being a Sindhi we like eating delicacies daily, 4 ppl in a house , will demand four other dishes, this one recipe is everybody's fav, it's like a breakfast that is made for special occasions and we keep waiting for this delicious one.
Recipe:
For sevaiyan:
  • 2 handfuls sevaiyan (vermicelli )
  • 5 tbsp - Sugar (v like less sweet, u can adjust taste wise)
  • 1 tsp elaichi powdered 
  • 3 tbsp - Ghee 
  • 2 cups - water ( water quantity varies with the quality of sevaiyan) ( basic thing is to soak the sevaiyan in water, so that it soaks up , if v add more , the result will be lumpy sevaiyan)
  • Almonds and pista for garnish.
For potatoes:
  • 2 big potato ( diced into small chunks)
  • 1 tsp coriander powder 
  • 1 tsp red chilli powder
  • Salt to taste 
  • 1/2 tsp turmeric powder
  • 6 tbsp oil
METHOD:
For sevaiyan:
  • Break the vermicelli into tiny pieces.
  • Lightly heat the ghee in a heavy bottomed vessel (sipri we use) for few seconds.
  • On a low flame, fry the vermicelli till it turns a shade darker than golden, add water and elaichi powder.
  • Cook on a medium flame, stirring continuously till the water dries up 
  •  Now add sugar.
  • Cover it with a lid for 2 mins and remove from the stove.
  • Serve hot with potatoes after 5 mins.
For potatoes:
  • Add oil in a pan , put potatoes along with salt and turmeric , mix and cover for 7-8 mins .
  • Open and check if done , now add coriander powder and red chili powder.
  • Mix nicely and cover for another 2 mins.
  • Done , its ready to serve.

Puffed Pizzas...


We all love doing variations , so do i.
So when I have some chunky tomato salsa left, I top it over khari biscuits and eat it... 
Yes, I said KHARI biscuits
Easiest, simplest , yummiest & crunchiest...

Recipe:
(Serves 4)
Ingredients:
6-8 khari biscuits (savory puffs) - Slit into half

For the topping:
  • 1/2 cup veggies mixed
  • (Onion , tomato, capsicum, paneer)
  • 1 tbsp tomato sauce
  • 1 tbsp chili sauce
  • 1/2 tbsp schezwan sauce
  • 1 tbsp pizza pasta sauce
  • 1/4 tsp oregano
  • 1/4 tsp chili flakes 
  • Cheese for grating on top
Method :
  • Mix everything under the topping section except cheese and keep aside.
  • Top each khari with the topping prepared and kept aside , grate cheese on top
  • Set all the puffs on a baking tray and bake at 250 degree for 5-7 mins.
  • Let it cool for 2-3 mins .
  • And it is ready to serve .

Oreo Cookie Mug Cake.



This Amazing 2 Minute mug cake is a must try... 
It's easy ... 
Super quick... 
Entire process jus needs 5 mins...
Recipe:
1/4 cup dark chocolate chips
3 tbsp whole milk
4 tbsp all purpose flour
1/4 tsp baking powder 
1/2 tbsp vegetable oil
3 Oreo cookies

Method:
Combine dark chocolate chips and milk in an oversized microwave safe mug for 40 seconds. Mix with a small whisk until chips are completely melted.
Add flour, baking powder , & oil , mix till smooth batter forms. 
Using a fork, smash Oreos in batter, until only small chunks remain.
Cook in microwave for 1 min 30 seconds .
Check with toothpick , if feel not baked so another 30 seconds do it.. As every microwave is different...
Mine took 2 mins.
Let cake cool for few mins.
Best consumed wen still warm.

Chocolate Oreo Mousse.



This heavenly MOUSSE is super creamy and extremely sinful...😍😍

Recipe :
Ingredients:

(Makes 2-4 servings depending on size of servings)
  • 3.5 oz semi sweet chocolate(100gm- can go with 1:1 proportion of dark +milk or can add entire dark )
  • 3/4 cup heavy cream, (you will whip it until soft peaks)
  • 6 crushed up oreos
  • 1 tbsp butter



Method:
  • Whip cream until soft peaks , melt the chocolate and fold it into the whipped cream - the mousse filling is ready.
  • Crush Oreos and add butter and keep aside.

Now to assemble:

  • Take glasses or bowls of you choice.
  • Put Oreo and butter mixture at the base.
  • Put a layer of cream and chocolate mix above that.
  • Top it with a piece of Oreo
  • And you are done, chill and serve .

Enjoy the creamiest mousse ...



Mix Fruit Jam Bundt Cake


This luscious BUNDT CAKE is healthy yet tasty...
My first try for the bundt , and already in love with shape, would definitely bake more of these...

Recipe:
Ingredients

  • 1 cup wheat flour
  • 1/3 cup mix fruit jam
  • 1/2 cup curd/yogurt
  • 1/2 cup cookin oil/olive oil
  • 1 tsp baking powder
  • 1/2 tsp soda bicarb
  • 1 tsp vanilla extract
  • 2-3 tbsp milk

Method:
  • Blend curd oil and Jam well.
  • Add wheat flour, soda bicarb and baking soda in curd jam mixture.
  • Add vanilla extract and mix well.
  • Grease the mould ,pour batter , bake in a preheated oven at 180 degrees for 35 minutes.
  • Check with a tooth pick , if not done, keep for few mins until done.

BBQ Paneer Pizza.

This scrumptious Pizza is a new favorite at my place... 
So thought of sharing here...
I am a complete foodie, I plan to prepare something having the recipe in mind, but while making, thinking goes to another level and definitely change the recipe a bit...
yeah, this is how I cook, but end up presenting something worth eating...

Recipe: 
Ingredients:
  • 2 tbsp oil 
  • 1/2 cup mix veggies roughly chopped ( corns , mushroom , Capsicum , paneer)
  • 1 small onion small chopped
  • 1 medium tomato small chopped 
  • 2 slices of cheese
  • 1 cube cheese grated 
  • Salt and Pepper as per taste
  • Oregano and Chilli flakes ( to sprinkle on top )
  • Small piece of coal ( for the BBQ taste )
Method:
To prepare the BBQ filling:
  • In a pan , put oil and add onion small cut , sauté fo 2 min.
  • Add tomato cut, sprinkle salt and black pepper, add the roughly chopped veggies;
  • Mix for a good 3-4 mins.
  • Now in the same pan add a small bowl, put little butter and a small piece of hot burning coal, put lid on and let it release its smokiness flavor.
  • Switch off flame in the next 2 mins but open the lid after 5 mins.
  • Filling is ready.

For the base sauce:
Take tomato sauce and schzwan sauce in equal quantity in a bowl .

Now to assemble:
  • Take the pizza base(I used store bought)
  • Warm a little on the pan (only the top side not the bottom).
  • Now cut the base in the center, not completely but like a pocket.
  • Add one cheese slice.
  • Now on the top apply the base sauce.
  • Add one cheese slice and put the bbq filling on top and add the grated cheese on top.
  • Roast on gas stove/oven until cheese melts.
  • Sprinkle oregano and chilli flakes and its ready to serve.

Papad Churi.



Here is the EASIEST ,& the SIMPLEST side snack for your meals... 
Super addictive too...
Being a Sindhi my love for papad increases day by day and so need varieties into it too...

Recipe:
Ingredients :
  • 10 papads
  • 8-10 garlic cloves 
  • 5-6 green chilies
  • 1 tsp red chili powder 
  • 1/2 tsp salt
  • Long cut onions (fried ) (I usually prefer without onions, but tastes Amazing with onions too)
  • Some fresh cut Coriander
  • Oil for frying the papad and roasting garlic.
Method :
  • Deep fry the papads , crush them with hands only and keep aside.
  • Chop the garlic and green chillies very finely
  • In a pan take oil (2-3 tbsp), Put garlic chilli chopped , let it turn light brown, now mix it with papads crushed, salt red chilli .
  • And you are done , add fresh coriander and serve.
Notes:
Goes well till one week if stored in an air tight container , though u can hardly resist yourself.
