MAGGIE MACARONI

A variation to the regular pasta & maggi ...
Combining these two gives a wonderful flavor, this recipe was adopted from a dear friend of mine, who is an amazing cook too.
Yes, the name is tempting too, do give it a try, it's simple , quick, yet amazingly delicious.

Recipe:
Ingredients:
  • 1 cup Macaroni (boiled with little salt and oil)
  • 2 packets maggi(₹10 each, used yippie , as our darling maggi isn't avail yet)(boiled without taste maker with little oil)
  • 1 big capsicum(small diced)
  • 1 big onion (small diced)
  • 1 tbsp garlic chili paste
  • 2-3 tbsp tomato ketchup
  • 2 tbsp chili sauce
  • Salt and pepper according to taste
  • Grated cheese (optional) - I like it without cheese
  • 3-4 tbsp oil
Method:
  • Boil macaroni and maggi seperately and keep aside
  • In a pan, put oil, add onions , capsicum, chili garlic paste, sauté till onion changes to light brown, now add sauces, salt pepper , maggi tastemaker(avail inside maggi packet), mix well.
  • Add macaroni and maggi, switch off the flame , mix , and it's done. 
  • Serve.

SABUDHANA KHICHDI ( with veggies)


Easiest and delicious...
A delight to have it , let it be breakfast or at the night time...
I like adding veggies, it enhances its flavor ...

Recipe: 
(Serves 3)
Ingredients:
  • 250 gm Sago (SABUDHANA ) - soaked
  • 2 big Potatoes - boiled and diced small 
  • 1 big Carrot- diced small and boiled little 
  • 1/4 cup Green peas- boiled
  • Few chilies and curry leaves
  • 2 tbsp Roasted peanuts - crushed
  • 4 tbsp oil
  • 1 tbsp sugar 
  • 1 tbsp cumin seeds
  • Salt and pepper to taste
  • Coriander leaves for garnish

Method:
  • Wash the Sabudhana once and soak for 4 hours in an air tight container ( water level for soaking should be just one inch above the sabudhana washed)
  • Put oil in a pan, add cumin seeds, peanuts, and mix for 2-3 mins.
  • Add potatoes, curry leaves , chilies, carrot and peas(both boiled little), mix for 2-3 mins.
  • Now add SABUDHANA , salt , pepper, sugar , mix nicely ... Till the sago turns transparent , may take 5 mins... 
  • It's done, serve with chopped coriander...

CHILLED KESAR BADAM MILK


Saffron and Almond flavored milk.
The name itself brings a smile, this amazing delicious fantastic milk, is authentic, nd soothing...

Recipe:
Ingredients :
  • Almond - 20 pieces (finely crushed/powdered )
  • Kesar few strands
  • Milk - 3 cups
  • Sugar - 4 tbsp
  • Green Cardamom powder - 1/4 teaspoon
Method :
  • Put everything together in a pan, boil , keep stiring, let the milk reduce to 2.5 cups, switch off the flame , cool, refrigerate, serve chilled.
  • Can serve immediately if prefer it hot...

SEYAL CHAPATTI




A lovely Sindhi delicacy.
almost every Sindhi family eats it, wen they have leftover rotis, yes,
This dish is made of stale rotis.
Many versions to cook it, 
This is one among them , 
Just coriander nd garlic ... 
Minimum ingredients maximum taste...


Recipe:
2-3 leftover rotis(broken into small pieces)
10-12 garlic cloves
Tiny piece of ginger 
1 big green chili
Handful of coriander leaves
Dry masalas(salt, red chili powder, coriander powder, turmeric powder)
1/2 cup water
2-3 tbsp oil
2-3 curry leaves
Half Lemon(optional- I like to squeeze it on rotis befr eatin)

Method :
Crush garlic, green chili, coriander leaves nd ginger , keep aside
In a pan put oil, put crushed garlic mix, sauté for 2 min, put dry masalas, curry leaves, mix, put broken roti pieces, put water, mix nicely, cook on low flame for 3-4 mins until dey nicely soft yet little crisp... 
Done...

BRAZILIAN BRIGADEIROS /RICH CHOCOLATE TRUFFLES


Today was all bout making these rich chocolate truffles, and having them...
Easiest they are , delicious they are too...


Recipe:
Ingredients:

  • 1/2 tin milkmaid (200gm)
  • 1/2 tbsp butter...
  • 1 1/2 tbsp cocoa powder


Method:

  • In a pan put everything together , once u see it has startd to boil, lower the flame nd cook until the mixture leaves the sides of pan nd form into a dough.(5-6 mins )
  • Once done , let it cool, grease ur hands , nd shape them into small balls nd coat them with ur fav toppings.

Kachalu aaloo chaat ( Indian Snack with sweet and spicy dips)

A perfect , easy, and quick snack for chai time craving...

Recipe:
(Serves 3)
Ingredients:
  • 2 cups Boiled colocasia and boiled potatoes(cut into small cubes)...
  • 1 tbsp Chaat masala
  • 1 tbsp Sweet chutney
  • 2 tbsp Green chutney
  • Sev to garnish 
Method:
  • Spread kachalu and aaloo in a big bowl.
  • Add both chutneys and chaat masala and mix well .
  • Sprinkle sev on top.
  • Ready to serve.

Sweet chutney:
  • Dates+tamarind + jaggery (equal quantity)
  • Boil all together till everything is soft and mushy - approx 7-10 mins on low flame.
  • Cool down and sieve the mixture nicely .
  • Put salt and red chili powder as per taste.
  • Ready to serve.
Green chutney:

RED VELVET SWIRL BROWNIES


Something close to my heart
Wanted to try the awesomest swirl brownies...
Here they are

Recipe:
All Purpose Flour - 1cup/130gm approx
Baking Powder- 1 tsp
Cocoa Powder - 3tbsp
Salt pinch
Softened Butter - 2 tbsp
White Granulated Sugar - ½ cup/100 gm approx.
milkmaid - 100 grams
Vanilla essence - 1 tsp
Milk- 1/3 cup/80 ml
Liquid Red Food Color - 2 ½ tsp
Melted Chocolate, 50 grams approx. (make sure it’s warm when you add it; cold or room temperature chocolate will freeze over the batter)(I used white choc, you can use dark/milk)
Tooth Pick, to make swirls

METHOD:
Take a 9”x9” square aluminum tin and brush it with butter. Set this aside.
Sift together flour, baking powder, cocoa powder and salt, and mix them until the cocoa powder is combined properly with the others. Set this aside to be used later.
In a separate bowl, whisk butter until light in color and a little fluffy. Add in the white granulated sugar and whisk again (5 minutes with hand and 2-3 minutes with mixer). The sugar must be completely covered with butter and the mixture will look pale in color. Dissolve sugar as much as you can by whisking.
Add milkmaid and vanilla essence, and whisk again until everything is combined.
Preheat the oven to 180 degrees for 10 minutes.
Start adding the dry mixture that you set aside in the first step to this. Keep alternating with milk so that the batter does not dry out. Mix using a spatula or a wooden spoon (NO WHISK)
Add in the red liquid food color and incorporate that with the batter until completely combined.
Pour this batter to the prepared tin. Now start dropping the chocolate over the batter in lines. First line should have 3 drops, second line will have 2 drops and so on.
Swirl 3 times using a toothpick. First time, swirl from top to bottom in continuous motions. Meaning once you run the toothpick through the chocolate drop in the first line, take a U-turn and run the toothpick through the dots on the second line. Second time, swirl from right to left in the same way. Third time, swirl from top to bottom in a continuous manner again.
Bake the brownie in the preheated oven for 20 minutes at 180 degrees Celsius.
Let the brownies cool down for about an hour before cut them.
