MAGGIE MACARONI

A variation to the regular pasta & maggi ...
Combining these two gives a wonderful flavor, this recipe was adopted from a dear friend of mine, who is an amazing cook too.
Yes, the name is tempting too, do give it a try, it's simple , quick, yet amazingly delicious.

Recipe:
Ingredients:
  • 1 cup Macaroni (boiled with little salt and oil)
  • 2 packets maggi(₹10 each, used yippie , as our darling maggi isn't avail yet)(boiled without taste maker with little oil)
  • 1 big capsicum(small diced)
  • 1 big onion (small diced)
  • 1 tbsp garlic chili paste
  • 2-3 tbsp tomato ketchup
  • 2 tbsp chili sauce
  • Salt and pepper according to taste
  • Grated cheese (optional) - I like it without cheese
  • 3-4 tbsp oil
Method:
  • Boil macaroni and maggi seperately and keep aside
  • In a pan, put oil, add onions , capsicum, chili garlic paste, sauté till onion changes to light brown, now add sauces, salt pepper , maggi tastemaker(avail inside maggi packet), mix well.
  • Add macaroni and maggi, switch off the flame , mix , and it's done. 
  • Serve.

SABUDHANA KHICHDI ( with veggies)


Easiest and delicious...
A delight to have it , let it be breakfast or at the night time...
I like adding veggies, it enhances its flavor ...

Recipe: 
(Serves 3)
Ingredients:
  • 250 gm Sago (SABUDHANA ) - soaked
  • 2 big Potatoes - boiled and diced small 
  • 1 big Carrot- diced small and boiled little 
  • 1/4 cup Green peas- boiled
  • Few chilies and curry leaves
  • 2 tbsp Roasted peanuts - crushed
  • 4 tbsp oil
  • 1 tbsp sugar 
  • 1 tbsp cumin seeds
  • Salt and pepper to taste
  • Coriander leaves for garnish

Method:
  • Wash the Sabudhana once and soak for 4 hours in an air tight container ( water level for soaking should be just one inch above the sabudhana washed)
  • Put oil in a pan, add cumin seeds, peanuts, and mix for 2-3 mins.
  • Add potatoes, curry leaves , chilies, carrot and peas(both boiled little), mix for 2-3 mins.
  • Now add SABUDHANA , salt , pepper, sugar , mix nicely ... Till the sago turns transparent , may take 5 mins... 
  • It's done, serve with chopped coriander...

CHILLED KESAR BADAM MILK


Saffron and Almond flavored milk.
The name itself brings a smile, this amazing delicious fantastic milk, is authentic, nd soothing...

Recipe:
Ingredients :
  • Almond - 20 pieces (finely crushed/powdered )
  • Kesar few strands
  • Milk - 3 cups
  • Sugar - 4 tbsp
  • Green Cardamom powder - 1/4 teaspoon
Method :
  • Put everything together in a pan, boil , keep stiring, let the milk reduce to 2.5 cups, switch off the flame , cool, refrigerate, serve chilled.
  • Can serve immediately if prefer it hot...

SEYAL CHAPATTI




A lovely Sindhi delicacy.
almost every Sindhi family eats it, wen they have leftover rotis, yes,
This dish is made of stale rotis.
Many versions to cook it, 
This is one among them , 
Just coriander nd garlic ... 
Minimum ingredients maximum taste...


Recipe:
2-3 leftover rotis(broken into small pieces)
10-12 garlic cloves
Tiny piece of ginger 
1 big green chili
Handful of coriander leaves
Dry masalas(salt, red chili powder, coriander powder, turmeric powder)
1/2 cup water
2-3 tbsp oil
2-3 curry leaves
Half Lemon(optional- I like to squeeze it on rotis befr eatin)

Method :
Crush garlic, green chili, coriander leaves nd ginger , keep aside
In a pan put oil, put crushed garlic mix, sauté for 2 min, put dry masalas, curry leaves, mix, put broken roti pieces, put water, mix nicely, cook on low flame for 3-4 mins until dey nicely soft yet little crisp... 
Done...

BRAZILIAN BRIGADEIROS /RICH CHOCOLATE TRUFFLES


Today was all bout making these rich chocolate truffles, and having them...
Easiest they are , delicious they are too...


Recipe:
Ingredients:

  • 1/2 tin milkmaid (200gm)
  • 1/2 tbsp butter...
  • 1 1/2 tbsp cocoa powder


Method:

  • In a pan put everything together , once u see it has startd to boil, lower the flame nd cook until the mixture leaves the sides of pan nd form into a dough.(5-6 mins )
  • Once done , let it cool, grease ur hands , nd shape them into small balls nd coat them with ur fav toppings.

Kachalu aaloo chaat ( Indian Snack with sweet and spicy dips)

A perfect , easy, and quick snack for chai time craving...

Recipe:
(Serves 3)
Ingredients:
  • 2 cups Boiled colocasia and boiled potatoes(cut into small cubes)...
  • 1 tbsp Chaat masala
  • 1 tbsp Sweet chutney
  • 2 tbsp Green chutney
  • Sev to garnish 
Method:
  • Spread kachalu and aaloo in a big bowl.
  • Add both chutneys and chaat masala and mix well .
  • Sprinkle sev on top.
  • Ready to serve.

Sweet chutney:
  • Dates+tamarind + jaggery (equal quantity)
  • Boil all together till everything is soft and mushy - approx 7-10 mins on low flame.
  • Cool down and sieve the mixture nicely .
  • Put salt and red chili powder as per taste.
  • Ready to serve.
Green chutney:

RED VELVET SWIRL BROWNIES


Something close to my heart
Wanted to try the awesomest swirl brownies...
Here they are

Recipe:
All Purpose Flour - 1cup/130gm approx
Baking Powder- 1 tsp
Cocoa Powder - 3tbsp
Salt pinch
Softened Butter - 2 tbsp
White Granulated Sugar - ½ cup/100 gm approx.
milkmaid - 100 grams
Vanilla essence - 1 tsp
Milk- 1/3 cup/80 ml
Liquid Red Food Color - 2 ½ tsp
Melted Chocolate, 50 grams approx. (make sure it’s warm when you add it; cold or room temperature chocolate will freeze over the batter)(I used white choc, you can use dark/milk)
Tooth Pick, to make swirls

METHOD:
Take a 9”x9” square aluminum tin and brush it with butter. Set this aside.
Sift together flour, baking powder, cocoa powder and salt, and mix them until the cocoa powder is combined properly with the others. Set this aside to be used later.
In a separate bowl, whisk butter until light in color and a little fluffy. Add in the white granulated sugar and whisk again (5 minutes with hand and 2-3 minutes with mixer). The sugar must be completely covered with butter and the mixture will look pale in color. Dissolve sugar as much as you can by whisking.
Add milkmaid and vanilla essence, and whisk again until everything is combined.
Preheat the oven to 180 degrees for 10 minutes.
Start adding the dry mixture that you set aside in the first step to this. Keep alternating with milk so that the batter does not dry out. Mix using a spatula or a wooden spoon (NO WHISK)
Add in the red liquid food color and incorporate that with the batter until completely combined.
Pour this batter to the prepared tin. Now start dropping the chocolate over the batter in lines. First line should have 3 drops, second line will have 2 drops and so on.
Swirl 3 times using a toothpick. First time, swirl from top to bottom in continuous motions. Meaning once you run the toothpick through the chocolate drop in the first line, take a U-turn and run the toothpick through the dots on the second line. Second time, swirl from right to left in the same way. Third time, swirl from top to bottom in a continuous manner again.
Bake the brownie in the preheated oven for 20 minutes at 180 degrees Celsius.
Let the brownies cool down for about an hour before cut them.

Recipe :
Ingredients:
1 cups flour
1 tsp baking powder
1/4 cup butter - softened
1/4 cup sugar-powdered
1/2 cup milk
1 tsp vinegar
1 tsp vanilla
Sprinkles
Method:
Mix the flour, baking powder, butter and sugar.
Add the milk, vinegar, vanilla and mix.
Now add funfetti (sprinkles ) generously...
Beat the batter smooth. Transfer onto the muffin moulds.
Bake in pre-heated oven for 20-25 minutes at 200- 220 degrees.

CARROT AND PEAS CURRY


This luscious tomato gravy with the cumin seeds tempering is such a comfort food for dinner, it's light , easy and healthy . 

Recipe:
(Serves 4)
Ingredients:
  • 4 small to medium carrots (peeled and cut into small squares)
  • 1/2 cup green peas
  • 1 tsp cumin seeds
  • 1 tbsp red chili powder
  • 1 tbsp coriander powder 
  • 1 tsp turmeric powder
  • Salt- according to taste
  • 4-5 medium tomatoes ( puree )
  • 3 tsp oil
  • Coriander leaves
  • Curry leaves 4-5
Method:
  • Put oil in a cooker, add cumin seeds let it turn color, put tomatoes , dry masala (salt , coriander powder , chili powder and turmeric powder), carrot and peas , put everything together.
  • Now cook till all the water dries up and the curry sticks a little to the bottom, this may take 5 min.
  • Now put 1/2 glass water and close the lid, cook til 4-5 whistle.
  • Open and check the gravy consistency and serve with hot chapatis .

COCONUT LADDOOS

They are quick , simple , just 4 ingredients ...

Recipe:
Ingredients :
  • 200 gm desiccated coconut
  • 1/2 can of condensed milk
  • 1/2 tsp cardamom powder
  • Desiccated coconut for decoration
  • Few chopped pistachios for decoration
Method:
  • Mix condensed milk and desiccated coconut , now shape them into laddoos, roll them in the desiccated coconut which was left aside for decoration.
  • Garnish the ladoos with chopped pistachios and that is it! Done!

POTATO BREAD SQUARES


Had Leftover aaloo parantha (a typical Punjabi potato stuffed flat bread )batter , but did not want fried aaloo wadas, so Thot of this quick yet simple thing...
and , it's baked...

Recipe:
you will need bread slices(one slice of bread makes four squares)
any leftover mix(aaloo/vege/chicken)(I had a leftover potato mix- boiled nd mashed potatoes , green chillies, fresh coriander leaves , salt and cumin seeds)
oil for brushing the pieces...
ketchup/chutney for serving
kaju pieces(optional)


Method:
cut bread into squares, put the aaloo mix on it, press nicely, apply half a piece of kaju, press...
Set the pieces on a baking tray, brush oil on each piece...
Bake at 200 degrees on the upper rack for 15 mins, or until the base is slight brown, and the kajus are changing their color...
once done, serve ...

MAKKAI PATTICE



My dad loves tikki(pattice/cutlet) in any form , so I keep making varieties for him...
AS , v getting corns in full swing these days , Thot of using them...
...
Recipe:
(Makes 7-8 small ones)

Aaloo/potato mixture:
2-3 Boiled nd mashed potatoes
Bread crumbs of 4 slices of bread
Salt to taste

Corn mixture:
100 Gm Boiled nd crushed(semi crushed) corns
1 tbsp Garlic nd chilli crushed/paste
1 tsp Chaat masala
1/2 tsp amchur powder(dry mango )
Salt to taste
1 tsp Red chili powder
1/4 tsp Garam masala powder
Grated cheese (1-2 cubes)
2 tbsp Oil/butter
Oil for deep frying / shallow fry


Method:
Mix everything under the aaloo mixture section , keep aside .
Nw take a pan, put butter , put garlic chilies crushed, sauté for a min, put corns semi crushed, sauté for 1-2 min, put Al masalas , mix nicely , switch off the gas, now put grated cheese,
mix properly , the stuffing is ready.
Nw take the aaloo mix , create a gap to stuff the corn mix,
close it properly , nd it's done, ready to fry...
Fry , serve , eat.

OREO EXPRESSO MILKSHAKE



The weather being hot, does not demands hot coffee,
But coffee being my main ...
I digged into chilled drink

Recipe:...
(2 glasses)

3 cups cold milk
1 tsp bournvita
2 tbsp coffee powder
3 tbsp sugar
5 Oreo biscuits (may need 1-2 extra for garnish)
4 tbsp milk powder (I used nestle everyday)
Few ice cubes

Method:
Blend everything on medium speed, serve.


VEG CUTLETS



Fried food is everyone's favorite .
So here are fried vegetable cutlets .
Simple , quick , yet tasty

Recipe:
(20-22 medium size cutlets)
...
5 potatoes (boiled nd mashed)
6 bread slices(done into bread crumbs)
2 tbsp garam masala powder
2 tbsp amchur powder
1 tbsp khuskhus
1/2 tbsp jeera
1 big beetroot (raw, grated)
2 medium carrots (raw, grated)
Small handful green peas(boiled nd crushed)
2 green chilies finely chopped
Salt to taste
Mix everything nicely, give desired shapes, fry , serve with chutney( http://loveisincookin.blogspot.com/2016/04/green-chutney-cilantro-dip-side-dish.html ) and ketchup ...

CHEESY PULL APART GARLIC BREAD



The best and the most awesome thing I hv ever made,
Just wow...
Simplest nd best... 
This thing was drooling over the Internet since a few days, I badly had to give it a try...
Nd guys , it's a must try , honestly go fo it... 

This is indeed a FUN centerpiece, a cost effective one, for your next gathering... 

Recipe: 
(Makes one loaf.)
  • 1/2 tbsp garlic powder(u can use fresh crushed garlic too)
  • 1 tbsp parsley
  • 1 small bread loaf(i used hard burger buns)
  • 1 tbsp butter
  • 2 slices cheese (i used britania)

  • Method:
  • Cut the bread loaf, one inch gaps, put cheese slices in the gaps(break into small pieces)
  • Apply butter (butter+ garlic powder), sprinkle parsley, keep it covered in an aluminium foil on a baking tray .
  • Bake for 10 mins, at 180 degrees, now remove from the oven, open the foil and bake for another 5 mins...
  • And now its done...
  • Serve hot...

Sooji Sheera



Perfect Sunday's call for such breakfasts
Melt in mouth , delicious , scrumptious , nd a mouth watering dish 
Recipe:
5 spoons sooji/semolina
1 spoon wheat flour
1 spoon besan/gram flour
8-9 spoons ghee/clarified butter
Pinch of elaichi powder/cardamom
Pinch of Kesar/saffron strands
Few pistachio (crushed) - garnish 
8-9 spoons sugar
Water as required(I put a little more than half glass of water)
Method:
Put ghee in a pan
Put sooji, just roast for 2 mins, so that its aroma releases, put besan nd wheat flour, roast 2 more mins, now add water , sugar , elaichi , kesar... Mix properly , no lumps left , now cover it nd let it cook for 4-5 mins...
Done ... 
Garnish nd serve...

Raw Salad





Something that is extremely refreshing , yet raw, no cookin, no condiments added, still tastes the best, this is the second dish in my no cook series, had posted biscuit laddoos, which were equally healthy , 
this is a Salad...
u try it once nd are surely makin it in ur daily routine 
Recipe:
A small handful of each(coconut , cabbage, carrot , peanuts, dates, sprouts, pomegranate )
Al are raw, 
finely chopped... 
Peanuts to be soaked in water for 10 mins nd den mixed in salad ...

Mix everything , eat, it is delish, 
Am not a salad person, but Neva leave dis...



U can add nd remove the items as per ur taste...
But these things together taste amazin..
Have it as it is...
Have it mixed with curd...
Tastes good both ways...

Marie Biscuit Ladoo


The Oh-so-awesome ladoos
These are super addictive,
Just 3 ingredients ,
Extremely good, and unique too...
Feed these to your loved ones and they keep guessing
These are healthy and are no Cook too.

Recipe:
(Makes 6 medium size ladoos )

  • 12-13 vita Marie biscuits(powdered in mixer grinder)
  • 1 & 1/2 tbsp ghee(I used amul)
  • 1 & 1/2 tbsp honey
  • Chopped nuts(optional)

Method:
  • Mix everything together and give the shape of LADOO .
  • Decorate with nuts as per choice.
Notes:
  • After mixing everything , u will feel ladoo is hard to make, the mixture will be coarse, but don't worry , it will eventually hold its shape .
  • You can also give them the authentic modak shape and offer as Prashad to Lord Ganesha.
