Mixed Vegetable Handi a delectable dish to eat. Serve it with any Indian bread for a wholesome meal. Easy to make and it tastes exactly like the mixed vegetable sabzi we eat in restaurants.

Ingredients:
- 3 tablespoon oil
- 1 tablespoon cumin seeds / Jeera
- 2 Medium onions , finely chopped
- 1 tablespoon Ginger , garlic and green chilli paste
- 2 Tomatoes pureed
- 1 tablespoon Red chilli powder
- 1 tablespoon Haldi / Turmeric powder
- 1/2 tablespoon garam masala
- 1/2 tablespoon coriander powder
- Salt , to taste
- 1/2 cup Carrot, diced
- 1/4 cup corns , boiled
- 1/2 cup Capsicum , chopped
- 1/4 cup Cauliflower , chopped
- 1/4 cup Green peas
- 1/2 cup Paneer , cubed
- 1/2 cup Potato , chopped
- 1 cup Water
- 3 tablespoon curd/ yogurt
- 1 tablespoon Kasuri methi ( Dried fenugreek )
- Take a pan , add oil and jeera.
- Now add fine chopped onions and let it sauté for 2-3 mins.
- Add garlic ginger and green chilli paste and fine chop tomatoes.
- Add salt and dry spices( salt , red chilli powder , coriander powder and turmeric powder) and mix nicely and cook for 5 mins covered.
- Meanwhile, fry the veggies - carrot capsicum cauliflower potatoes paneer , for 2 mins not long.
- Now add these veggies in the onion tomato mix and add washed green peas and corns too
- Add 2-3 spoons curd along Kasturi methi and garam masala.
- Mix nicely and add water and cook another 5-7 mins covered.
- Once done check the gravy consistency and then serve .
